Chicken with mushrooms and garlic 2

Ingredients

500g chicken breast

1 tbs oil

2 cloves garlic, crushed

100g kale, stalks removed, coarsely chopped

1 bunch broccolini, chopped

1 bunch asparagus, chopped

2 spring onions, finely sliced

100g button mushrooms, sliced

100ml chicken stock

20g shredded Parmesan,

juice of 1 lemon

Method

1: Place the chicken between two sheets of cling film and flatten with a rolling pin to approx 1 cm thick

2: Heat a heavy based pan and add the oil

3: Gently fry the chicken until lightly browned all over. Remove from pan

4: Add kale to the pan and stir fry until crunchy

5:  Add garlic, mushrooms, spring onions, broccolini and asparagus to the pan. Turn heat up nd stir fry for approx 5 minutes. Add the chicken and stock and bring to a simmer. The chicken will start to fall apart as you stir it.

Step 6: Take the pan off the heat. Stir through lemon juice and serve sprinkled with Parmasen
