Taco Bowl

Who doesn’t love tacos? I know I do. But as I follow the rules of MP nutrient timing, I’m not always in a position to eat the high energy taco shells. Instead, I enjoy this Taco Bowl. Great for a warm summer’s night too.

This recipe will serve 4.

INGREDIENTS

500g mince (beef, chicken or turkey)

1 brown onion, finely chopped

1 tbs oil

1 sachet taco seasoning

3/4 cup frozen corn kernels

1 lebanese cucumber, diced

1/2 cos lettuce, shredded

1 large carrot, grated

2 tomatoes, diced

1/2 cup grated cheese

salsa of a hotness of your choice.

METHOD

Heat oil in a heavy-based pan. Add onion and cook until soft. Add mince, Stir until meat is well browned. Add contents of seasoning sachet and rinse sachet with water, adding rinse water to the pan. Add corn kernels and stir until mixture thickens and meat is cooked through.

Serve in a bowl with piles of the lettuce, carrot, cucumber and tomato. Top meat with salsa and a littel grated cheese.
