Beef Stroganoff

Ingredients:

750 g beef stir fry strips

150g button mushrooms, sliced

1 medium onion, sliced

2 tbs olive oil

2 tbs plain flour

2 tbs tomato paste

3/4 cup beef stock

Method

Heat 1 tbs oil in a heavy based fry pan or saucepan. Add onion and cook until beginning to soften. Add mushrooms and cook, stirring 3-4 minutes. Remove from pan.

Heat remaining oil in pan. Coat beef strips in flour then add to pan in batches, stirring until brown. Remove previous batch before adding next batch.

When all beef is browned, add all beef, mushrooms and onions back into pan. Add tomato paste and stock. Bring to boil and cook until sauce has thickened.

Serve with rice for inside the window, or cauliflower rice for outside and green beans and carrot.
